A simple recipe that checks all the boxes, this chocolate log is a favorite with Greek families for a reason.

The Greek beloved version of chocolate salami is known as mosaiko (because it slightly resembles a mosaic), or kormos (log). Loved by young and old, it is as easy as it is quick to prepare, all in one pot. Served cool from the fridge, it is the perfect summer dessert to have on hand for impromptu get-togethers.
Below is a simple recipe for a basic mosaiko with biscuits. If you like, you can get creative and switch some of the biscuits for other treats – try nuts or dried fruits of your liking.
Method
Melt the butter in a medium-sized pot over low heat.
Remove the pot from the heat, add the icing sugar and cocoa, and beat with a whisk until smooth.
Add the eggs one by one, mixing well after each addition.
Add your liquor of choice, and finally the biscuits, and stir to combine.
Pour the mixture onto a large piece of plastic wrap, and, using the plastic, roll it into a log. Twist the ends of the plastic wrap in order to seal it, like a candy wrapper.
Place your mosaiko in the fridge overnight.
Slice and serve.
